Finding Balance between Old and New
Tseng Shao-Lian and Lee You-Hsien have been best friends from their time together in Kai Ping Culinary School. They worked at different establishments, until one day, Tseng decided to look for a partner to begin his dream, a new restaurant. He convinced his trusted friend, Lee, and together, they founded RiceBar, one of the top modern Chinese restaurants in Taipei.
As a 13-year-old only child, Tseng started his culinary journey working for a dumpling restaurant.
He said: "Kai Ping Culinary School is a great school in that we learned to take responsibilities for ourselves. This openness, in turn, motivated me to improve and take my own initiatives. The school set up specific theme projects for us, such as how to plan for a new establishment, and guided us throughout the preparation process. Other traditional schools would demonstrate rote learning and punish those with low test scores, but not at Kai Ping Culinary School".
Besides classical dishes from southern Chinese provinces, at RiceBar, there are several new dishes with creative names. The unique interior design and dish names helped open up perspectives of Chinese cuisine. Tseng and Lee demonstrated the power of innovative thinking in their efforts in the Ricebar brand.
